Low Carb Jambalaya with Chicken, Shrimp and Sausage is a healthful and nutritious twist on the New Orleans classic that’s made with cauliflower “rice.”
Karen gave it 5 STARS and said: “I made this last night and it was absolutely delicious. The only change I made was to use chicken thighs (my preference) and Andouille chicken sausage (all I had). I doubled the recipe without a problem. Baking the cauliflower rice is brilliant! I might add chopped scallions as a garnish next time. Thank you for a great recipe!”

It only took the serene photograph on the cover of Flavors of Sicily, Fresh and Vibrant Recipes From A Unique Mediterranean Island by Ursula Ferrigno, for me to buy this cookbook. Sicily is on my bucket list of places to visit because of its rich culinary heritage with influences left behind by all the cultures who once occupied this Mediterranean island: The Greeks, Romans, Arabs, Normans and Spaniards.
Flavors of Sicily features authentic recipes from the island such as Veal with Artichokes and Broad Beans, Grilled Herb-Stuffed Pork Skewers with Bay Leaves Onions Baked in Marsala, Braised Cannellini Beans with Prosciutto and Herbs and Olive, Rosemary and Sausage Bread.
