Butter Lettuce Salad 

with Shrimp Mango Avocado and Sweet Chili Vinaigrette

Fresh, flavorful, healthy and crunchy Butter Lettuce Salad with Shrimp, Mango, Avocado and Sweet Chili Vinaigrette is perfect for a light summer meal!

  Ingredients:

Mango Lime Shrimp Boston Lettuce Cilantro Avocado Sweet Chili Sauce

Vinaigrette

Combine all vinaigrette ingredients in a food processor and blend until smooth. Season to taste with salt and black pepper.

Shrimp

Drop the shrimp into boiling water and cook 1-2 minutes. Drain and rinse.

Combine

Place greens on a platter. Top with shrimp, mango, avocado, chiles, cilantro and lime wedges.

Drizzle on the sweet chili vinaigrette and ENJOY!
