Chicken Milanese 

with Cherry Tomato and Arugula Salad

Chicken Milanese is a classic Italian dish that's super easy to make and comes together in about 45 minutes. A simple Cherry Tomato Salad with balsamic vinaigrette served over peppery arugula makes a bright, fresh summery side dish.

  Ingredients:

Skinless Chicken Breast Breadcrumbs (Italian-style) Parmesan Cheese Cherry Tomatoes Balsamic Vinegar Arugula Olive Oil Seasoning

Make Salad

Combine cherry tomatoes, red onion, garlic, balsamic vinegar, olive oil, salt and black pepper to taste. Add the fresh basil and set aside.

Prepare

Cut the chicken into even cutlets. Mix flour, and seasoning in a bowl. Place eggs, salt and black pepper in another bowl. Combine breadcrumbs, Parmesan cheese and lemon zest in a bowl and season.

Coat Chicken

Dredge each cutlet in the flour, then dip in the egg mixture. Then place in the breadcrumbs, coating each chicken cutlet well.

Cook

Cook cutlets 3-4 minutes on each side, over medium-high heat. Adjust the heat so the coating does not burn. Place in the oven to keep warm.

Place a handful of fresh arugula on a plate, top with chicken and tomato salad. Serve lemon wedges on the side. Enjoy!
