Creamy Asparagus and Rice Casserole

Elegant Creamy Asparagus and Rice Casserole is a delicious, creamy make-ahead side dish that's perfect with anything you're serving!

  Ingredients:

Converted White Rice Asparagus Butter Cream Cheese Shallot Heavy Cream Chicken Broth

Prepare

Cook the rice and set aside. Cut up asparagus and cook 10-15 seconds in boiling water. Then place in an ice bath.

Cook shallot, add garlic, flour, wine, chicken broth and cream, let simmer.

Creamy Sauce

Combine

Take off the heat and add in cream cheese and Parmesan. Combine the cooked rice, asparagus and cream sauce. Transfer to a baking dish.

Combine Parmesan, panko, parsley and butter.  Sprinkle over casserole.

Topping

Bake

Top with the  asparagus. Cover with aluminum foil. Bake for 20-22 minutes. Remove foil and continue baking another 20-25 minutes.

Serve as a lovely spring side dish or vegetarian main dish and ENJOY!
