Crustless Southern Tomato Pie

Nothing says summer in the south more than a tomato pie! This Crustless Southern Tomato Pie is as easy as it gets and is perfect for a low-carb diet for any meal of the day.

  Ingredients:

Tomatoes Mozzarella Cheddar Cheese Mayonnaise Scallions Fresh Basil Eggs

Prepare Tomatoes

Slice the tomatoes and generously salt both sides then place on a baking sheet lined with paper towels, to drain for approximately 30 minutes.

Mix mozzarella, white cheddar, mayonnaise, eggs, garlic and black pepper in a small bowl.

Spread ⅓ cup of the cheese mixture on the bottom of the prepared baking dish. Layer ⅓ of the tomatoes over the cheese, slightly overlapping.

Spread cheese over the tomatoes. Add another layer of tomatoes. Sprinkle with scallions and basil.

Second Layer

Bake

Top with the remaining tomatoes and cheese. Bake for 35-40 minutes. Let stand 10-15 minutes.

Garnish with basil leaves, cut into wedges. Serve and ENJOY!
