Easy Red Beans and Rice

Traditionally a dish that takes all day, this simplified version of the Louisiana classic, Red Beans and Rice can be ready in a little over an hour.

  Ingredients:

Red Beans Andouille Sausage Green Bell Pepper Celery Vegetable Broth Cajun Seasoning Rice

Saute Vegetables

Cook onion until it starts to soften. Add the green bell pepper and celery. Continue cooking for another 5-7 minutes.

Add garlic, Cajun seasoning, herbs and sausage and cook briefly, 10-15 seconds.

Cook Sausage

Simmer

Add the red beans and the rest of the ingredients, bring to a boil and then simmer for  25-30 minutes.

Add seasoning and fresh parsley. Serve over hot, cooked rice. ENJOY!
