This easy turkey brine recipe of salt, sugar and fresh herbs is super simple and versatile–you can also use it with pork or chicken.
Boneless Turkey Breast Half Hot Tap Water Kosher Salt Granulated Sugar Black Peppercorns Fresh Thyme Fresh Rosemary Fresh Sage
Add 8 cups of very hot tap water to a stainless steel bowl. Whisk in salt and sugar, it will be cloudy. Keep whisking until the water clears and the salt and sugar have dissolved.
Crush herb sprigs and peppercorns with a rolling pin until they're well-bruised and fragrant.
Add herbs to the water. Slip the turkey breast into the brine and refrigerate for up to 4 hours. Pat dry to cook.
You can also pat dry and place in the refrigerator uncovered overnight to dry out the skin then proceed with your recipe.
