Eggs in Purgatory with Italian Sausage

When you don’t know what to make for breakfast, brunch, lunch or dinner, Eggs in Purgatory with Italian Sausage, a twist on the southern Italian classic is the perfect solution!

  Ingredients:

Eggs Italian Sausage Fennel Bell Pepper Tomatoes Parmesan Cheese Seasoning

Cook Sausage

Cook the Italian sausage in an oven-safe skillet until no longer pink. Transfer sausage to a paper towel-lined plate to drain.

Add all other ingredients, and simmer until thickened and slightly reduced.

Simmer

Bake

Stir in half the parsley and add seasoning. Make four wells and add the eggs. Bake for 8-12 minutes.

Sprinkle with parsley and Parmesan cheese. Serve and ENJOY!
