French Onion Soup for Two
French Onion Soup is a classic that’s always in season! This version is scaled perfectly for a lovely dinner for two!
Ingredients:
Olive Oil Butter Onions Garlic Thyme Bay Leaf Salt
Flour Red Wine Beef Broth White Wine (Optional) French Bread Gruyere Cheese
Step 1:
Cook the onions with salt, fresh thyme sprigs and a bay leaf until the onions are a beautiful golden brown. Remove the thyme sprigs and bay leaf before proceeding.
Step 2:
Add the garlic and red wine and cook until the wine is almost evaporated, then add the flour and cook briefly.
Step 3:
Add the beef broth, bring to a boil, reduce the heat and simmer until slightly reduced. Taste for seasoning and add the white wine if needed.
Step 4:
Preheat the broiler. Place French baguette slices on a baking sheet and top with Gruyere cheese. Broil briefly until melted and beginning to brown.
Step 4 Option:
You can also place the bread and cheese on top of the soup then place it under the broiler to lightly brown and toast it.
