Onion Celery Garlic Carrots Zucchini Parmesan Parsley Red Pepper Green Pepper
– Heat olive oil in a Dutch oven over medium-high heat. – Add onion, reduce heat to medium and cook for 3 - 4 mins or until it softens. – Add the carrot and celery. Continue cooking for another 3 - 4 mins or until tender. – Add red and green pepper - cook for 2 - 3 minutes. – Add the zucchini and cook for 2 to 3 minutes or until all the vegetables are tender.
Toss in the Garlic and Red Wine, allowing it to come up to a boil.
– Add the chicken broth, tomato sauce, diced tomatoes, Italian seasoning and crushed red pepper flakes.
– Add the pasta and cook another 10 minutes or until the pasta is cooked through.
Finish with the parsley and season to taste with salt and black pepper.
