Loaded Roasted Eggplant Dip

Loaded Roasted Eggplant Dip, also known as Baba Ganoush, is perfect as a healthy snack, game day addition or as part of a Mediterranean-inspired feast.

  Ingredients:

Eggplants Tahini Paprika Cayenne Pepper Pine Nuts Cucumber Kalamata Olives

Roast Eggplant

Halve the eggplants lengthwise and brush with olive oil. Place on the prepared baking sheet cut side down. Roast for 45-50 minutes.

Scoop the flesh into a food processor and blend with remaining ingredients.

Topping

Transfer to a serving bowl, drizzle with olive oil. Sprinkle with paprika and top with tomatoes, cucumbers, olives, pine nuts and parsley.
