Ingredients:
Quinoa
Zucchini
Yellow Squash
Bell Peppers
Lemon Juice
Garlic
Scallions
Bring water, lemon zest, olive oil, salt and pepper to a boil. Add quinoa, and simmer for 12-15 minutes. Let stand 10-12 minutes. Fluff with a fork, transfer to a large bowl and let cool.
