Miso-Glazed Eggplant

This easy miso-glazed eggplant recipe is based on Nasu Dengaku, the classic Japanese starter that rocks with flavor!

  Ingredients:

White Miso Mirin Soy Sauce Honey Japanese Eggplants Scallion Garlic Toasted Sesame Seeds

Miso Glaze

Whisk miso, mirin, soy sauce, honey, ginger and garlic in a small bowl and set aside.

Cook

Cut the eggplant in half lengthwise. Brush with canola or vegetable oil. Place cut side down on the baking sheet and bake for 15 minutes.

Glaze

Turn the eggplants over and brush with miso glaze. Broil for 3 minutes or until the glaze is lightly charred.

Sprinkle with sesame seeds and sliced scallion and serve immediately. Enjoy!
