Mojo-Marinated Pork Skewers

Get your summer grilling mojo on with these Cuban-inspired Mojo-Marinated Pork Skewers! The marinated pork tenderloin flavor is bright and citrusy, a little spicy and a lot delicious!

  Ingredients:

Pork Tenderloin Scallions Oregano Fresno Chile Limes Garlic Cilantro

Prepare Pork

Trim the pork tenderloin, by removing the thin piece of connective tissue, then cut in half widthwise and again in half lengthwise.

Mix Marinade

Combine the marinade / dipping sauce ingredients in a food processor, blend until smooth.

Refrigerate

Transfer 2 cups of marinade to a small bowl and the remainder to a zipper-top bag. Place pork in the bag. Refrigerate for 4-8 hours.

Thread Skewers

Thread a lime quarter on each skewer then thread pork strips, and another lime wedge.

Grill

Cook skewers on the grill at medium heat for 5-6 minutes per side or until cooked to at least 145 degrees.

Garnish with fresh cilantro. Serve with the reserved dipping sauce. ENJOY!
