Oven-Baked Spanish Tortilla

Unlike the Mexican tortilla, this Oven-Baked Spanish Tortilla is a dish by itself with bell peppers, garlic, and a touch of heat from red pepper flakes.

  Ingredients:

Yukon Gold Potatoes Bell Peppers Manchego Cheese Sour Cream Red Pepper Flakes Scallions Garlic

Slice the potatoes and cook in salted water. Drain and let cool.

Cook Potatoes

Saute

Saute bell peppers, scallions and garlic. Let it cool then add Manchego cheese and crushed red pepper flakes. Stir in the potatoes.

Transfer to the prepared baking dish, evenly distributing the potatoes.

Prepare

Bake

Whisk together the eggs and sour cream then pour over the vegetable mixture. Bake for 30-40 minutes.

Let cool then cut into pieces as desired. ENJOY!
