Radish Greens Salad with Hot Bacon Dressing

Radish greens are edible and they're delicious! Save them to make this Radish Greens Salad with Hot Bacon Dressing, a twist on the classic spinach salad.

  Ingredients:

Bacon Dijon Mustard Radish Greens Eggs Sugar Garlic Cider Vinegar

Crisp Bacon

Cook the bacon until crisp. Transfer to a paper towel-lined plate and pour the bacon fat into a cup. 

Clean skillet, add bacon fat. Cook the onion just to soften it. Add garlic.

Saute

Cook

Reduce heat to low. Add the sugar, cider vinegar, mustard and seasoning. Cook briefly to melt the sugar. Remove skillet from the heat.

Add the radish greens and bacon to the skillet. Toss to just slightly wilt the greens.

Combine

Top with eggs and season generously with black pepper. ENJOY!
