Roasted Riced Vegetables

with Garlic and Parmesan

Take cauliflower rice up another level with this Roasted Riced Vegetables with Garlic and Parmesan dish. It's simply delicious!

  Ingredients:

Cauliflower Rice Carrots Zucchini Yellow Squash Bell Pepper Parmesan Cheese Garlic

Prepare Cauliflower

Place the riced cauliflower and carrots on a prepared baking sheet, Drizzle with olive oil and season.

Place zucchini, squash and bell pepper on the second baking sheet. Drizzle with olive oil and season.

Prepare Vegetables

Roast

Place both sheet pans in the oven and roast for 12 minutes. Tent the cauliflower pan, set aside. Add garlic to the other one and roast 4-5 minutes.

Combine both sheet pans of vegetables, stir well. Add Parmesan and parsley.
