Stout Braised Beef Short Ribs and Colcannon

Stout Braised Beef Short Ribs and Colcannon are long on flavor and ease with hearty, delicious Irish-inspired slowly-simmered fall-off-the-bone comfort food goodness!

Step 1:

Season 6 meaty short ribs with salt and pepper then brown on all sides in oil.

Step 2:

Cook onion, celery, carrots until they're nice and melty soft.  Add garlic, flour and tomato paste.

Step 3:

Add a large can of stout beer and bring to a boil.  Add beef broth and fresh thyme.

Step 4:

Place the short ribs back into the Dutch oven.  Cover tightly then place in the oven for low and slow braising for 2 1/2 - 3 hours.

Step 5:

Make the colcannon to serve with the short ribs.

Step 6:

Skim as much fat as possible from the top.

Serve the short ribs with the colcannon and the lovely beer-infused gravy!
