Swiss Chard and Quinoa Dolmas with Tzatziki is a fun vegetarian twist on the Middle Eastern dish made with grape leaves, meat and rice.

Step 1:

Blanch Swiss chard leaves then drain on a clean kitchen towel.

Step 2:

Make the savory quinoa filling and let cool.

Step 3:

Trim the stems from the Swiss chard leaves, chop and add to the quinoa filling to reduce food waste.

Step 4:

Place equal amounts of the filling on each chard leaf and roll up as shown.

Step 5:

Make the tzatziki.

Can be prepared a day ahead and refrigerated. Serve with lemon wedges and olives.
