Traditional Ratatouille

This lovely Classic French Ratatouille has all the summer veggie goodness going on with eggplant, zucchini, yellow squash and sweet bell peppers simmered to perfection in a lively tomato sauce.

  Ingredients:

Prepare

Prepare vegetables, cube eggplant and place in a colander, sprinkle with salt, and let drain. 

Cook eggplant for  3-4 minutes. Transfer to a bowl.

Cook Zucchini 

Cook zucchini and yellow squash for  3-4 minutes. Transfer to eggplant bowl.

Saute onions, add in bell peppers, tomato, garlic, and wine. Bring to a boil.

Bring To A Boil

Simmer

Add crushed tomatoes, bay leaf, and spices. Return eggplant, zucchini, and yellow squash to the pot, and simmer 20-25 minutes.
