Vegetable Barley Soup

Wholesome down to the last spoonful! Italian-inspired Vegetable Barley Soup is packed with vegetables and barley in a tomatoey broth that's both healthful and soul-satisfying!

  Ingredients:

Pearled Barley Zucchini Onion Carrots Yellow Squash Angel Hair Coleslaw Vegetable Broth

Cook Barley

Cook the barley in salted water until tender but still al dente. Drain through a sieve and set aside.

Cook onions, celery, and carrots. Add bell pepper, zucchini, and yellow squash.

Cook Vegetables

Simmer

Add the rest of the ingredients, bring to a boil, then simmer until vegetables are tender. Add the cooked barley, parsley and seasoning.

Serve with crusty bread and freshly grated Parmesan Cheese. ENJOY!
