2poundspurple Brussels sproutsor green if that's all you can find
1/4cupolive oil
Salt and freshly ground black pepperto taste
6slicesbacondiced and cooked
2tablespoonsbutter
1/4cupfreshly grated Parmesan cheese
Instructions
Preheat oven to 425 degrees.
Trim off any dry stem ends and any unsightly outer leaves. Cut the sprouts in half and place on a large rimmed baking sheet.
Drizzle with olive oil and season to taste with salt and black pepper. Turn as many of the sprouts cut side down as possible and that will fit on the baking sheet.
Roast for 12-15 minutes (depending upon size).
Remove from the oven and immediately toss with the 2 tablespoons butter and the bacon.
Transfer to a serving platter and top with freshly grated Parmesan cheese.
Notes
If you can’t find purple Brussels sprouts, no worries! Just use baby green Brussels sprouts instead.
