Why This Recipe is a Keeper!

This homemade buttermilk blue cheese dressing is packed with bright, savory flavor, surpassing anything in a store-bought bottle. I’m a real blue cheese lover and will even go so far as to say it’s the best blue cheese dressing! I’ve made it many times for personal chef clients.

Rich, tangy buttermilk starts the flavor party. Equal parts of mayonnaise and sour cream perfectly balance a rich yet not too heavy dressing. Creamy, earthy Gorgonzola cheese adds bold, umami flavor, while garlic, onion, and a splash of lemon juice elevate the flavors for a well-rounded dressing you’ll agree is the best blue cheese dressing!

The dressing keeps well in the fridge for a week and improves as the ingredients meld together. It’s perfect over a crisp, cold lettuce wedge or sliced tomatoes. This blue cheese dressing recipe’s cool and tangy flavors also make it ideal as a dip for chicken wings!

This blue cheese dressing recipe is:

  • Quick and easy! Just combine all of the ingredients in a mixing bowl and serve.
  • Flavorful! Robust Gorgonzola cheese gives this dressing a bold and vibrant flavor.
  • A keeper! You can make this dressing in advance and refrigerate it for up to a week until ready to serve.
  • Homemade. This recipe uses simple ingredients, resulting in a dressing packed with much more flavor than the bottled kind.

How to Make Blue Cheese Dressing:

Recipe Ingredients:

Here’s everything you’ll need to make the best blue cheese dressing recipe. The recipe card below has the exact quantities.

Ingredient Notes and Substitutions:

  • Buttermilk: Buttermilk is fermented milk, and it’s one of my favorite ingredients to cook with. It’s thicker than milk with a delightful tanginess that works well in salad dressings without adding a lot of extra fat. I use regular buttermilk, but you can use low-fat if you prefer.
  • Sour Cream: Adds another level of tanginess. You can substitute plain Greek yogurt if you prefer.
  • Lemon Juice: Fresh is always best!
  • Onion: I use a small amount of fresh, minced yellow onion rather than dried flakes. I recommend chopping as finely as possible.
  • Gorgonzola Cheese: Gorgonzola is an Italian blue cheese. Gorgonzola cheese is a type of blue cheese from Italy. Its signature blue color is created by a mold added to the cheese. The mold is safe to consume and helps give the cheese its intense umami flavor. Like other types of blue cheese, it has a bold umami flavor that adds a vibrant kick to any dish. Because of its bold flavor and super creamy texture, Gorgonzola cheese is my key to the best blue cheese dressing. Gorgonzola cheese is sold in blocks or crumbled in small tubs. Either will work. Crumbled blue cheese is convenient but has additives to keep it from clumping. You can substitute another type of blue cheese, although other varieties of blue cheese can have a more robust flavor.

Step-By-Step Instructions:

  • Gather and prep all the ingredients.
  • Combine dressing ingredients in a mixing bowl.
  • Mix well and refrigerate.
  • That’s it! How to make blue cheese dressing is super simple!

Ingredients

  • 1 cup buttermilk
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tablespoon lemon juice
  • 1 tablespoon minced yellow onion
  • 3 cloves garlic, minced
  • 3 tablespoons chopped fresh parsley
  • 8 ounces crumbled Gorgonzola cheese, or blue cheese
  • Salt and freshly ground black pepper, to taste

Instructions

  • Combine dressing ingredients in a mixing bowl. Mix well and refrigerate.

Notes

This dressing won’t be like bottled blue cheese dressing, which uses modified food starch to thicken and stabilize it. I suggest using “thicker” products. For example, some sour creams may not be as thick as others (we use Daisy), and full-fat buttermilk will be thicker than lower-fat buttermilk.
Yield:  3 cups
MAKE AHEAD:  I recommend making it a day ahead of time so the flavors have a chance to blend. This dressing lasts for about one week in the refrigerator.

Very good. Better than any bottle. Used buttermilk from a local a2 farm. It was thicker, also crumbled an 8 oz. block of blue cheese. Most cheese I’ve ever seen in a dressing. No fat-free anything. Actually found it to be thicker than store-bought. Was my first time making blue cheese dressing.

How can I make it a little thicker?

Hi, Kenneth, Thanks so much for your question. Sorry for the delay; I was away from my computer all weekend. This dressing won’t be like bottled blue cheese dressing, which has things like modified food starch to thicken and stabilize it. I suggest using “thicker” products. For example, some sour creams may not be as thick as others (We use Daisy) and full-fat buttermilk will be thicker than lower fat. Thanks again, and hope you enjoyed!
