As a personal chef for over 15 years, I’ve gained extensive experience on recipe development creating palate and diet-specific cuisine for a variety of different needs. That experience involves cooking for people with difficult health issues such as severe food allergies, diabetes, heart disease and gastrointestinal concerns.
My column, Dinner for Two, enjoyed a six-year run in the food section of Memphis’ daily newspaper, The Commercial Appeal. On a weekly basis, I created original recipes on a small scale based on what inspires me, what’s new and fresh at area markets or what I have in the refrigerator, pantry or freezer.
In addition, five of my original recipes were accepted for publication in the 25th Anniversary Edition of The Fresh Market and Friends Cookbook.
