    Happy New Year!

    First, I want to wish all of you a happy, healthy, prosperous, wonderful, safe and delicious 2018!  Thank you all so much for reading, subscribing, following and making From A Chef's Kitchen a bigger success than I ever dreamed!

    Did you wake up this morning with big plans to lose weight and get in shape?  If you're starting a special diet or workout program, here's to your success!

    However, if you're like me, you know this resolution will not last very long.  I love food and cooking too much to give up any of it!  So, instead of following special diets, I believe in moderation, moving more and just eating "healthyish."

    I've got tons of creative recipe ideas swirling around in my head for this year.  Also, one of my goals is to provide you with an estimated nutritional analysis for each recipe.

    To kick off 2018, here are 18 of My Favorite Healthyish Dinners!  From vegetarian to chicken, fish and seafood to beef, these are dinners you can enjoy on almost any diet with simple modifications.  They're all packed with flavor and are sure to satisfy without feeling deprived.
