Make-Ahead Mashed Potatoes (Mashed Potato Casserole)
Make-Ahead Mashed Potatoes are smooth, creamy, slightly cheesy, garlicky, a little bit tangy and a whole lot delicious!
Simple ingredients you may already have on hand!
Boil the potatoes.
Melt the butter.
Using a potato ricer, "rice" the potatoes into the melted butter.
Gently stir the potatoes.
Puree the cream cheese, sour cream and half-and-half... NOT THE POTATOES.
Stir the potatoes until everything is nicely blended.
Transfer to a baking dish and refrigerate.
Fluffy, delicious and reheats
