Roasted Beet Salad

with Walnuts Goat Cheese and Honey Balsamic Dressing

Roasted Beet Salad with Walnuts, Goat Cheese and Honey Balsamic Dressing is a classic, elegant salad perfect for any occasion!

  Ingredients:

Beets Baby Salad Greens Walnuts Goat Cheese Balsamic Vinegar Honey Dijon Mustard Onions

Roast Beets

Rub beats with olive oil then place in a roasting pan. Pour water into roasting pan. Cover with foil. Roast for 45 minutes to 1 hour.

Whisk together ingredients for the dressing. Refrigerate until needed.

Dressing

Combine

Combine sliced beets and red onion. Drizzle with the dressing and toss to coat. Leave at room temperature for 15-20 minutes.

Place greens on a platter. Top with beets, sprinkle walnuts and goat cheese over the top.
