Garlic Herb Butter Roast Chicken with Root Vegetables is a one-pan meal with rustic elegance everyone will enjoy!

You'll need:

Potatoes Carrots Turnips Shallots

Garlic Thyme, Parsley and Rosemary Lemons

For the Butter:

Butter Lemon Juice and Zest Garlic Thyme, Parsley and Rosemary

Step 1:

Prep the root vegetables and sprinkle with some of the fresh herbs.  Add salt and pepper to taste.

Step 2:

Prep the chicken.  Wash and pat dry then stuff with lemon halves and fresh herbs.

Step 3:

Tie the legs and tuck the wings underneath.  Make, then spread the herb butter under and over the skin.

Step 4:

Place the chicken over the root vegetables.  Drizzle the vegetables with a little chicken broth.

Step 5:

Roast for about 1 hour or until the chicken registers 165 degrees in the thickest part of the thigh.
